In an exercise that has seen the Lancaster London move completely away from its previous supplier of undercounter warewashing equipment, three FV40.2G GiO machines have just been installed.
Two are used in the Lounge Bar, one for glassware, the other for dishes. The third is directly facing the hot beverage station in the busy Island Grill, where it handles a mixed selection of crockery, cutlery and glassware.
All three machines feature MEIKO’s GiO Reverse Osmosis water treatment that provides sparkling clean, spot free results and does not require the use of a water softener, saving valuable floor space behind the counter.

The hotel spent some £6 million in 2010/11 on a refurbishment of the two main function kitchens. These are located on different floors, one above the other and work in tandem to handle anything up to 2,000 covers.
The upgrade focussed on energy saving and key to the back of house refurbishment was a new M-iQ rack transport dishwasher, fitted with reverse osmosis, for use as a glasswasher in the Westbourne kitchen.
Upstairs in the Nine King’s kitchen, a second wide body M-iQ flight dishwasher and a third standard width M-iQ machine, both with integral reverse osmosis, handle the crockery and cutlery. The integral reverse osmosis system has totally negated the need for localised water softening of the final rinse water.
In 2011, the then Director of Back of House Operations Oliver Darwin commented: “The wash quality is spot-on – we don’t need anyone for polishing any more. On the old MEIKO machines, we used to have three people polishing; now we just have to check the ware is OK. Up to functions of 350, I now need just one person rather than two to man the machine.
